Serves 3 to 4 | 20 minutes
Ingredients
- 1.5 lb chicken breast, cut into bite-size pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- Salt and pepper
- 3 tbsp butter
- 2 cloves garlic, minced
- Juice of half a lemon
- 1 tbsp chopped parsley
- Pinch of red pepper flakes
Instructions
- Toss the chicken with the olive oil, garlic powder, paprika, onion powder, salt and pepper.
- Cook in a hot skillet in a single layer, undisturbed, for about 4 minutes. Flip and cook another 3 to 4 minutes until browned and cooked through.
- Lower the heat. Add the butter, minced garlic and red pepper flakes, and swirl until the garlic smells sweet, about 1 minute.
- Off the heat, add the lemon juice and parsley and toss to coat.
Serve with rice, in a wrap, or over a salad. Doubles well and reheats fine the next day.
